Description

Moist, spiced pumpkin bread with a crispy walnut streusel topping. This easy recipe makes two golden loaves bursting with fall flavor and cozy warmth.


Ingredients

Scale

2 cups all-purpose flour

½ tsp salt

1 tsp baking soda

½ tsp baking powder

1 tsp ground cloves

1 tsp ground cinnamon

1 tsp ground nutmeg

¾ cup unsalted butter, softened

2 cups granulated sugar

2 large eggs

1 (15-oz) can pumpkin puree

Streusel Topping: 

½ cup chopped walnuts

¼ cup brown sugar

1 tbsp melted butter

1 tsp cinnamon


Instructions

  1. Preheat oven to 325°F. Grease and flour two 8×4-inch loaf pans.
  2. Mix dry ingredients: flour, salt, baking soda, baking powder, cloves, cinnamon, and nutmeg.
  3. Beat butter and sugar until fluffy. Add eggs one at a time. Beat in pumpkin puree.
  4. Fold in dry ingredients until combined. Divide batter evenly into pans.
  5. Mix walnuts, brown sugar, butter, and cinnamon for the streusel. Sprinkle on top of batter.
  6. Bake 65–75 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool in pans 10 minutes, then transfer to a rack to cool completely.

Wrap cooled loaves tightly for up to 3 days at room temp or 1 week refrigerated.

Freeze loaves or slices for up to 3 months.
