Slice of lemon blueberry dessert on a plate with garnish

There are desserts you make once, and then there are the ones you crave forever. This No Bake Lemon Blueberry Dessert falls into the second category. One sunny afternoon in Santa Rosa, I whipped this up for the local rescue shelter’s potluck. I needed something quick, beautiful, and soul-satisfying—no oven, no stress. What came out of my kitchen that day has since become my go-to 13×9 recipe whenever I want to wow a crowd or just treat myself on a Tuesday.

With tangy lemon cream cheese, sweet blueberry pie filling, and a buttery graham cracker crust, this chilled dessert is as delightful as it is easy. And the best part? It’s entirely no bake.

🍋 Why This No Bake Lemon Blueberry Dessert Works Like Magi

Let’s be honest—there are days when even turning on the oven feels like too much. That’s why I swear by no bake desserts like this one. The No Bake Lemon Blueberry Dessert is not only refreshingly simple, but also rich, creamy, and layered with flavor.

Here’s why it’s such a knockout:

  • It chills instead of bakes—keeping your kitchen cool.
  • This dessert was made for sharing, it fits snugly in a 13×9 dish, which means it’s perfect for big families, backyard BBQs, or that church potluck you forgot about until the last minute.
  • The contrast of zesty lemon and sweet blueberries is downright dreamy.

Each layer in this no bake lemon blueberry dessert builds on the last. The crust? Buttery with a light crunch. That lemon layer in the middle? Silky, tart, and just rich enough. And the blueberry pie filling? It’s the sweet, jewel-toned ribbon that ties everything together in one gorgeous slice.

🥄The Lemon Cream Cheese Layer That Steals the Show

No bake lemon blueberry dessert in glass dish with visible layers

The magic of a no bake lemon blueberry dessert lies in its center: the lemon layer. It’s the perfect balance of tart and sweet, light but rich. To make it, I mix cream cheese, lemon juice, milk, and a packet of instant lemon pudding.

Here’s how to get that luscious, thick texture:

  1. Beat the cream cheese and sugar until smooth.
  2. Add fresh lemon juice and cold milk—not too much!
  3. Add the dry lemon pudding mix last. This step thickens everything fast.

This lemon filling sets beautifully in the fridge, and it’s sturdy enough to hold the blueberry pie filling without it sinking in. That’s key to keeping the layers neat and pretty.

🧁 Tip: Drop the lemon layer in big spoonfuls over the crust, then gently spread. This prevents lifting the crust and keeps everything gorgeous.

🫐 Layer It Like a Pro

Once your lemon layer is set, it’s time for the fun part: building the rest of this no bake lemon blueberry dessert. Spoon blueberry pie filling gently over the lemon layer. The deep blues and purples against the pale yellow are just stunning.

Next comes the crown: a thick layer of Cool Whip or any whipped topping you love. It adds that perfect airy finish, contrasting the dense lemon and juicy blueberry beneath.

I always reserve a handful of graham cracker crumbs to sprinkle on top. It gives a subtle crunch and finishes the look with bakery-style flair.

🎂 Assembly Order:

  1. Graham cracker crust (chill while prepping the filling)
  2. Lemon cream cheese mixture (spoon and spread)
  3. Blueberry pie filling (drop and gently spread)
  4. Whipped topping (scoop and swirl)
  5. Optional: Sprinkle remaining crumbs

🧊 Chill it in the fridge for at least 4 hours, or even overnight for best results.

🧊 Make-Ahead Magic + Storage Tips

A single slice of no bake lemon blueberry dessert with garnishes

This no bake lemon blueberry dessert isn’t just a showstopper, it’s also ultra practical. It stores beautifully in the fridge and can be made a full 24 hours in advance, making it ideal for holidays, birthdays, and last-minute get-togethers.

🧺 Storage Tips:

  • Keep it tightly covered in the fridge for up to 5 days.
  • Store in a glass or foil 13×9 pan with a lid to protect the layers.
  • Avoid freezing—it affects the texture of the cream cheese and topping.

✨ Fun Variations:

  • Feeling playful? Swap in strawberry or cherry pie filling for a fresh twist. You’ll get the same creamy base with a whole new burst of berry flavor.
  • Before serving, I like to sprinkle a little fresh lemon zest over the whipped topping. It adds a bright citrus sparkle and makes the whole dish smell amazing.
  • Swap graham crackers for vanilla wafers or lemon cookies.

Hosting a weekend brunch? Serve a cool square alongside a cup of lemon tea or a few Mini Cookies & Chips on the side.
