Description
A baked Twix cheesecake recipe featuring a buttery shortbread crust, creamy filling, dulce de leche caramel, and dark chocolate ganache.

320g shortbread biscuits
100g melted butter
200g sugar
60g corn flour
800g cream cheese
1 tbsp vanilla
300ml warm double cream
160g melted white chocolate
380g dulce de leche
120g dark chocolate
120ml double cream
Instructions
- Preheat oven to 170°C (325°F). Line and foil-wrap your springform tin.
- Crush biscuits, mix with butter, and press into base. Chill.
- Mix sugar, corn flour, cream cheese, vanilla, and warm cream until smooth. Add white chocolate and blend.
- Pour batter into pan. Bake in a water bath for 45–55 mins. Cool for 1 hour in oven.
- Spread dulce de leche on top. Chill for 10 mins.
- Pour ganache over caramel. Chill cheesecake overnight.
- Slice, serve, and enjoy!
